Yesterday I awoke from a pot induced stupor, and decided this would be a good idea. (turns out it was)

I got a packet of smoked bacon, pine nuts, fresh basil and sage, parmesan, smoked garlic, paprika and some fresh pepper and chucked in the food processor, whizzed it till it was nice and fine. Then I got a whole chook, lifted the skin (without tearing) on the breast side, and stuffed just about all of it between the skin and the meat.
Then with the remaining stuffing (about a tablespoon) I wet it down a little with some olive oil and a chunk of butter, and rubbed it all over the rest of the chook (give it a real good rubbing)

Then I had a bunch of veg (root and fresh) chopped em up to a fairly small size, mixed some smoked red onions and some olive oil and seasoning, put them in a pile in the roasting dish, stuck the chook on top of the veg pile, chucked in the oven at 200 for 15 mins - gave it a quick baste, and then turned the oven down to 170 till it was finished.

Made a quick reduction of the drippings and resting juices to dress it.

Bacony chicken stuff, that was just fucking amazing and easy as fuck.

in some olive oil soften a chopped up onion, crushed garlic and a tspoon of mixed herbs... when that stuff is all yummy smelling and soft add in 250ml light cream slowly bring to the boil.. then add a grated courgette.. add in some tuna or whatever.. cook it till it's saucy add loads of pepper and salt.. I used lite lemon and pepper tuna omg so nice..... cook up some pasta chuck it in.. easy and yum.

... that's about it. Was thinking about making some bread tonight with chunky seeds through it..

I was going to add butter, but the bacon was very marbled and I wasn't too sure how much fat was going to come out, so as a compromise I added it to the rub.

QT, try roasting the pumpkin first, the skin (once cooled) just peels off with your fingers.

A quick awesome pumpkin soup - thai-ish

A couple of table spoons of curry paste (red or green - which ever you like most), in a hot soup pot, with some veg oil. Fry till fragrant, chuck in a sliced onion, and garlic. Soften and just as it starts to caramelize, put in the chopped up pumpkin, and let that do its thing for a while. Add however much water you need (depending on how big your pumpkin is - Ive been using baby buttercup, and due to their size I use two). Chuck in a couple of bay leaves.
Let that cook down for a while, keep an eye on it and season accordingly. Once its all soupy, blend it down - I use a whiz stick as that way you don't have to transfer to different containers.
Put it back on the heat, and add a can of coconut cream, stir through - you may need to season again. Serve with crusty peasant bread.
I like to make pork and sesame balls and chuck them in too.

Easy as fuck and awesome for a cold Sunday night.
