If you are noticing you have low energy/sleep issues etc etc you should get your B12 tested. It is common for it to be low in wheat aids victims. I have monthly B12 jabs now. Makes such a huge difference.

Basically people need a certain amount of H2O a day to function, which comes from everything that you consume including coffee, tea and food (at least a third of your water should come from what you eat).

Different people need different amounts based mostly on what exercise they do as far as I know. Drinking too much can be just as bad for your health as not drinking enough.

The urine test is actually not a bad one - though you have to be careful of the berocca effect (lots of vitamins do this).

Yah. One doc told me it was common for coeliacs, and another told me it wasn't heh. I was stupidly tired (like physically couldn't keep my eyes open sometimes), grumpy, unhappy etc, but I couldn't actually sleep. I thought it must have been some mineral I was lacking in. They just do a blood test to check your level (ask them to check the intrinsic factors/pernicious anaemia at the same time to save you having to go back for another test).

Yup, I go in once a month for a jab. I can def feel the difference, but the bad thing is that I also really notice it wearing off. Once your body's reserves build back up you apparently just have some vitamin thing.
